  • 1 tsp black pepper Adjust to taste.
For the Cheese Filling
  • 1.5 cups whole milk ricotta
  • 1 large egg
  • 0.5 cup grated parmesan
  • 3 tbsp fresh basil, chopped For flavor.
For Topping
  • 2 cups shredded mozzarella For finishing the dish.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly and poke holes all around them using a fork. Place them on a baking sheet.
  3. Bake the potatoes for about 45-50 minutes, or until they are fork-tender.
Cooking the Meat Sauce
  1. In a skillet, heat olive oil over medium-high heat.
  2. Add the diced onion and minced garlic, cooking until translucent (about 3-4 minutes).
  3. Add the ground beef, breaking it apart, and cook until browned (about 5-7 minutes).
  4. Stir in the marinara sauce, tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Let this simmer for about 10 minutes.
Mixing the Cheese Filling
  1. In a bowl, combine ricotta, egg, grated parmesan, and chopped fresh basil. Stir until well mixed.
Assembling the Dish
  1. Once the potatoes are cooked, slice them in half lengthwise. Scoop out a portion of the insides to make room for the filling.
  2. Add a generous layer of the meat sauce, then top with the ricotta mix, and finish with a handful of shredded mozzarella.
Final Bake
  1. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until the cheese is melted and golden.
Serving
  1. Enjoy your Lasagna Stuffed Baked Potatoes warm, garnished with fresh basil!

Notes

For substitutions, ground turkey or chicken can replace the beef. Keep an eye on the moisture in the meat sauce and adjust if necessary. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze before baking.
