  • 2 tablespoons fresh rosemary, chopped Optional: use 1 tablespoon of dried rosemary.
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon pepper Freshly cracked pepper enhances flavor.
  • 1 unit Juice of 1 lemon Adds brightness to the dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the olive oil, minced garlic, chopped rosemary, salt, pepper, and lemon juice to create the marinade.
  3. Place the lamb chops in a large bowl or resealable bag and pour the marinade over them. Ensure they are evenly coated and let them marinate for about 15 to 20 minutes at room temperature.
  4. While the chops are marinating, prepare a baking dish by lightly greasing it or lining it with parchment paper.
Cooking
  1. Once marinated, arrange the lamb chops in the prepared baking dish in a single layer.
  2. Place the dish in the preheated oven and roast for 20-25 minutes, flipping the chops halfway through for even cooking. Ensure internal temperature reaches 145°F (63°C) for medium-rare.
  3. After cooking, let the lamb chops rest for about 5 minutes before serving.
  4. Garnish with fresh rosemary or a lemon wedge if desired.

Notes

For variations, substitute rosemary with thyme or oregano. Monitor cooking times based on chop thickness. Store leftovers in an airtight container for 3-4 days or freeze for 2-3 months. Reheat at 350°F (175°C) for 10-15 minutes.
