Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the olive oil, minced garlic, chopped rosemary, salt, pepper, and lemon juice to create the marinade.
- Place the lamb chops in a large bowl or resealable bag and pour the marinade over them. Ensure they are evenly coated and let them marinate for about 15 to 20 minutes at room temperature.
- While the chops are marinating, prepare a baking dish by lightly greasing it or lining it with parchment paper.
Cooking
- Once marinated, arrange the lamb chops in the prepared baking dish in a single layer.
- Place the dish in the preheated oven and roast for 20-25 minutes, flipping the chops halfway through for even cooking. Ensure internal temperature reaches 145°F (63°C) for medium-rare.
- After cooking, let the lamb chops rest for about 5 minutes before serving.
- Garnish with fresh rosemary or a lemon wedge if desired.
Notes
