Method

Preparation
  1. Start by slicing the onion and chopping the carrots and baby potatoes. Set them aside.
Searing the Beef
  1. In a large skillet, heat vegetable oil over medium-high heat. Season your beef chuck roast with salt and pepper and sear it on all sides until browned (about 3-4 minutes per side). This step is crucial for locking in flavors!
Mixing the Sauce
  1. In a small bowl, combine gochujang, soy sauce, grated ginger, minced garlic, and brown sugar. Mix well to create a smooth sauce.
Slow Cooking
  1. Transfer the seared beef to your slow cooker and pour the sauce over it. Add in sliced onions, chopped carrots, and halved potatoes. Pour in beef broth until the veggies are covered.
  2. Cover the slow cooker and cook on low for 6-8 hours or until the beef is fork-tender. If you're short on time, you can cook on high for 4-5 hours.
Serving
  1. Once done, taste and adjust the seasoning if needed. Serve hot, garnished with sesame seeds and chopped green onions.

Notes

For a richer flavor, consider marinating the beef in the sauce overnight before cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze in freezer-safe bags for up to 3 months. When reheating, gently heat in a saucepan on low with a splash of beef broth.
