  • 1 can (15 oz) sweet corn, drained
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise Greek yogurt can be used as a healthier alternative.
  • 1 tablespoon sugar (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped green onions (optional)
  • to taste Chili flakes for extra heat (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the drained sweet corn, mayonnaise, sugar (if using), salt, and pepper. Stir until well incorporated.
  3. Gently fold in the mozzarella cheese until evenly distributed.
  4. Pour the mixture into a greased baking dish or oven-safe skillet, spreading it evenly.
  5. Sprinkle additional mozzarella cheese on top for an extra cheesy finish.
  6. Bake for about 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with chopped green onions and chili flakes if desired. Serve hot!

Notes

Can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for about 10-15 minutes at 350°F (175°C) to restore texture.
