Ingredients
  

For the Meatballs
  • 1 lb Ground beef or meat substitute Fresh for the best flavor.
  • 1 bunch Green onions Adds refreshing crunch and flavor.
  • 2 cloves Garlic, minced Essential for flavor.
  • 1 tsp Ginger, minced For a touch of warmth.
  • 1/4 cup Soy sauce Add savory depth.
  • 1 tbsp Brown sugar Balances the savory elements.
  • 1/2 cup Breadcrumbs For binding.
For the Spicy Mayo Dip
  • 1/2 cup Mayo
  • 1-2 tbsp Sriracha Adjust to taste for spice.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, minced garlic, minced ginger, soy sauce, green onions, brown sugar, and breadcrumbs. Mix until well combined, being careful not to overwork the meat.
  3. Scoop out portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake the meatballs in the preheated oven for about 20 minutes or until they are golden brown and cooked through.
  2. While the meatballs are baking, combine mayo and Sriracha in a small bowl. Adjust the spiciness to your preference.
  3. Once the meatballs are done, toss them in extra soy sauce if desired, and serve with the spicy mayo dip on the side.

Notes

Use fresh ground beef for the best taste; don't overmix the meatball mixture; store leftovers in an airtight container for up to 3 days!
