Ingredients
  

Dry Ingredients
  • 1 cup rolled oats Blend into flour-like consistency
  • 1 teaspoon baking powder
  • a pinch salt
Wet Ingredients
  • 1 cup fresh spinach Well-washed and packed
  • 1 cup milk (dairy or plant-based) Any alternative can be used
  • 1 large egg
  • 1 tablespoon honey or maple syrup Optional for sweetness
For Cooking
  • as needed butter or oil For cooking pancakes

Method
 

Preparation
  1. Blend the oats in a blender or food processor until they reach a flour-like consistency.
  2. Add the fresh spinach, milk, egg, and sweetener (if using) to the blended oats, and blend until smooth.
  3. Gradually mix in the baking powder and salt into the batter.
Cooking
  1. Preheat a skillet over medium heat and add a little butter or oil to coat the pan.
  2. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface.
  3. Flip and cook for an additional 2 minutes on the other side.
Serving
  1. Stack the pancakes and serve warm with toppings of your choice.

Notes

To avoid gritty texture, ensure spinach is well blended. Substitute milk with a non-dairy option if preferred. Cook pancakes at moderate heat to ensure they cook through without burning.
