Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand.
- Press this mixture firmly into the bottom of a greased 8x8-inch baking dish to form the crust.
Baking the crust
- Bake the crust for about 8-10 minutes until it’s lightly golden. Remove from the oven and let it cool slightly.
Making the filling
- In another bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth.
- Stir in the lime zest for that extra burst of flavor.
Finishing up
- Pour the key lime mixture over the cooled crust and spread it evenly.
- Bake for an additional 15-20 minutes or until the center is set.
Cooling and serving
- Allow the bars to cool at room temperature, then refrigerate for at least 2 hours to allow them to firm up for easy slicing.
- Once chilled, cut into squares, top with whipped cream and lime wedges, and enjoy!
Notes
For best results, use fresh key lime juice, and do not overbake the filling. Allowing the bars to chill properly will enhance the flavors and make slicing easier.
