- Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
- In a mixing bowl, whisk together the eggs until fully beaten. Add salt, pepper, and optional garlic powder for extra flavor.
- Stir in the crumbled sausage and shredded cheese into the egg mixture. If you’re adding veggies, fold them in at this stage.
- Carefully pour the mixture into the prepared muffin tin, filling each compartment about ¾ full.
- Bake in the oven for about 20-25 minutes, or until the tops are golden and a toothpick comes out clean when inserted.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature!
Notes
These muffins can be mixed with various ingredients like bell peppers or spinach. Store leftovers in an airtight container for up to 5 days in the fridge, or freeze for longer storage.
