  • 1 cup broccoli, chopped Fresh broccoli is recommended.
  • 1 cup cheddar cheese, shredded Quality cheddar makes a difference.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine chopped broccoli and shredded cheddar cheese. Add garlic powder, salt, and pepper. Mix until well combined.
  3. With a sharp knife, carefully slice each chicken breast lengthwise, creating a pocket for the stuffing.
  4. Generously fill each chicken breast pocket with the broccoli-cheddar mixture.
Cooking
  1. In an oven-safe skillet, heat olive oil over medium heat. Add the stuffed chicken breasts to the skillet, cooking for about 3-4 minutes on each side until they’re golden brown.
  2. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the cheese is bubbling.
  3. Remove from the oven and let sit for a few minutes before serving.

Notes

For a unique flavor twist, consider using a blend of different cheeses. Ensure your chicken is evenly cooked by using a meat thermometer, aiming for an internal temperature of 165°F (74°C). Don’t overstuff the chicken to prevent spillage while cooking.
