Method
Preparation of the Crust
- In a large bowl, combine the flour, sugar, and salt. Add the cubed butter and mix until the texture resembles coarse crumbs.
- Mix in the egg yolk and then gradually add the ice water, one tablespoon at a time, until the dough comes together.
- Shape the dough into a disc, wrap it in plastic, and refrigerate for at least 30 minutes.
Preheating the Oven
- Preheat your oven to 375°F (190°C).
Rolling Out the Crust
- On a floured surface, roll out the chilled dough into a circle large enough to fit your pie dish. Transfer the crust to the dish, trimming any excess dough.
Making the Filling
- In a mixing bowl, whisk together the heavy cream, milk, sugar, eggs, vanilla extract, and nutmeg (if using).
Assembling the Pie
- Pour the filling into the pie crust, spreading it evenly.
Baking the Pie
- Place the pie in the preheated oven and bake for 40-45 minutes or until the filling is set and the crust is golden brown.

- Let the pie cool before slicing. Enjoy it warm or chilled, perhaps with some whipped cream or fresh berries on top!
