  • 1 bunch kale, chopped Packed with nutrients
  • 1 medium onion, diced Adds flavor and depth

  • 2 medium carrots, sliced Adds sweetness

  • 1 teaspoon olive oil For sautéing

Method
 

Preparation
  1. In a large pot, heat 1 teaspoon of olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  2. Stir in the sliced carrots and diced celery, cooking for another 5 minutes until they start to soften.
  3. Add the vegetable broth to the pot, bringing it to a gentle simmer.
  4. Once the broth is bubbling, add the chopped kale and season with salt and pepper to taste. Allow it to simmer for another 10 minutes, letting the flavors meld beautifully.
  5. Taste and adjust seasonings as needed. Ladle the soup into bowls, and garnish with your favorite toppings if desired.

Notes

For added protein, consider adding chickpeas or lentils. Be careful not to overcook the kale. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
