  • 8 ounces whole wheat pasta (or pasta of choice) Can be substituted with gluten-free pasta.
Dressing and Toppings
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese For a vegan variation, substitute with nutritional yeast.
  • 1 cup croutons (store-bought or homemade)
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Preparation
  1. Begin by boiling a pot of salted water. Add the pasta and cook according to the package instructions until al dente. Strain and rinse with cold water to halt the cooking process. Set aside.
  2. In a large mixing bowl, combine the chopped kale and lemon juice. Massage the kale with your hands for about 2-3 minutes to tenderize the leaves and enhance flavors.
Combine
  1. To the bowl with kale, add the cooled pasta, minced garlic, olive oil, and Caesar dressing. Toss until the pasta and kale are coated evenly.
  2. Sprinkle the grated Parmesan cheese and croutons over the salad. Give one last gentle toss to mix everything before serving.
Taste and Adjust
  1. Sample your salad and, if desired, adjust the seasoning by adding more lemon juice or cheese if your heart desires.

Notes

For an even richer flavor, prepare the salad a few hours in advance and let it chill in the fridge. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat carefully, adding fresh croutons just before serving for best taste.
