  • 1 cup vital wheat gluten Provides the chewy texture.

  • 1 teaspoon garlic powder Adds depth to the flavor.

Wet Ingredients
  • 1/2 cup vegetable broth Augments the flavor of seitan.

Preparation
  1. In a large bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a separate bowl, mix together the soy sauce, olive oil, and vegetable broth. Slowly pour this mixture into the dry ingredients.
  3. Mix until the ingredients form a dough. Knead it for about 3-5 minutes until you have a firm but stretchy texture.
  4. Form the dough into a chicken-like shape.
Cooking
  1. In a pot of simmering water or vegetable broth, gently place the seitan. Let it simmer for about 30-40 minutes.
  2. Once cooked, let it cool slightly, then slice it into pieces.
  3. Heat a little oil in a skillet and sear those slices until golden brown on both sides.
  4. Enjoy your Juicy Vegan Seitan Chicken on its own, in wraps, or with your favorite sides!

Notes

Storing and reheating tips: Keep in an airtight container in the refrigerator for up to 5 days or freeze for up to a month. To reheat, sauté in a skillet with olive oil.
