Ingredients
  

For the Marinade
  • 4 pieces boneless chicken thighs (skinless, Halal-certified)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 juice of limes (freshly squeezed)
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper adjust for heat preference
  • Salt and pepper to taste
For Serving
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Method
 

Preparation
  1. In a bowl, combine the minced garlic, lime juice, olive oil, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Stir well to create a flavorful marinade.
  2. Add the chicken thighs to the marinade and ensure they are well-coated. Cover with plastic wrap and refrigerate for at least one hour, or overnight for best results.
  3. Preheat your outdoor grill to medium-high heat, or prepare a grill pan on the stovetop.
Grilling
  1. Remove the marinated chicken from the refrigerator to come to room temperature for about 15 minutes.
  2. Place the chicken thighs on the grill and cook for 6-7 minutes per side, or until they reach an internal temperature of 165°F (75°C).
Serving
  1. Once grilled to perfection, remove the chicken from the grill and let it rest for a few minutes.
  2. Garnish with fresh cilantro and serve with lime wedges. Enjoy with your favorite sides!

Notes

For added flavor, marinating overnight is ideal, but one hour will suffice. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. To reheat, thaw in the refrigerator overnight, then warm in a skillet over low heat.
