Preparation
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the ground meat until browned. Drain any excess fat. Add the taco seasoning according to package instructions and mix well.
- In a large bowl, combine the Jiffy cornbread mix, milk, and egg. Stir until just combined, it’s okay if there are a few lumps.
Assembly and Baking
- In a greased baking dish, spread the seasoned meat mixture evenly across the bottom. If using, sprinkle black beans on top.
- Pour the cornbread batter over everything and spread it evenly.
- Place the dish in the preheated oven and bake for approximately 20-25 minutes, or until the cornbread is golden brown and a toothpick comes out clean.
- Remove from the oven and sprinkle shredded cheese over the top. Return to the oven until the cheese is melted and bubbly.
- Let it cool slightly, then serve warm with toppings like salsa, sour cream, or chopped green onions.
Notes
For an extra twist, try adding sautéed bell peppers or onions to the meat. If you want a kick, consider diced jalapeños or hot sauce. Experiment with different cheese types for added flavor.
