For the Cake
  • 1 cup unsalted butter, softened Be sure to use high-quality butter.
  • 1 cup granulated sugar
  • 4 large eggs Room temperature recommended.
  • 2 cups all-purpose flour Sifted before measuring.
  • 2 teaspoons baking powder
  • 1 tablespoon matcha powder Use high-quality matcha for best results.
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy—about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and matcha powder until combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just incorporated. Avoid overmixing!
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
  1. Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an authentic experience, serve with freshly brewed green tea or whipped cream. Store leftovers tightly wrapped at room temperature for up to 3 days.
