  • 1 cup jasmine rice Use day-old rice for best results.
  • 2 cups cooked chicken, diced Grilled or rotisserie works great.
  • 3 tablespoons Japanese BBQ sauce Teriyaki or yakitori sauce can be used.
  • 1 cup mixed vegetables Carrots, peas, and corn mix.
  • 2 pieces green onions, chopped For garnish and flavour.
  • 1 tablespoon sesame oil For sautéing.
  • 2 pieces eggs, beaten Scramble in the skillet.
  • to taste Salt and pepper
  • to taste Optional garnishes: sesame seeds, additional green onions, and spicy mayo For serving.

Preparation
  1. Cook the jasmine rice according to package instructions. Once done, set aside and let it cool slightly.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the diced chicken and sauté for about 5 minutes until slightly caramelized.
  3. Add the mixed vegetables and chopped green onions. Cook for an additional 3-4 minutes or until the veggies are tender.
  4. Push the chicken and vegetable mixture to the side of the skillet, making room in the center. Pour the beaten eggs into the center and scramble until fully cooked.
  5. Add the cooked rice to the skillet and pour in the Japanese BBQ sauce. Mix everything together and stir-fry for about 5 minutes, ensuring the rice is heated through and coated evenly.
  6. Taste your fried rice and add salt and pepper if needed. Garnish with sesame seeds and additional green onions for an extra pop of flavor. Serve hot!

Notes

For added depth of flavor, marinate your chicken in BBQ sauce before cooking. If you’re feeling adventurous, consider adding pineapple for a sweet twist. Avoid using soggy rice; day-old rice works best as it’s drier and less sticky!
