Ingredients
  

For the Filling
  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 4 fresh jalapeños, diced Seeded for less heat, if desired
For the Onion Rings
  • 2 large onions, sliced into rings
  • 1 cup bread crumbs
  • 1 cup flour
  • 2 large eggs beaten
  • ½ cup milk

Method
 

Preparation
  1. Carefully slice the onions into thick rings, separating them. Set aside.
  2. In a mixing bowl, combine cream cheese, shredded cheddar cheese, diced jalapeños, salt, and pepper. Mix until creamy and well combined.
  3. Take a ring and fill the center with the jalapeño cheese mixture. Place another ring on top and gently press together until secure. Repeat until all filling is used.
  4. Prepare three shallow bowls: one with flour seasoned with salt and pepper, the second with beaten eggs and milk, and the third filled with breadcrumbs.
Cooking
  1. Dip each stuffed onion ring first in the flour, coating it evenly, then in the egg mixture, and finally in the bread crumbs. Ensure they are fully coated.
  2. In a deep frying pan, heat oil to 350°F (175°C). Fry the onion rings in batches until they are golden brown, about 3 to 4 minutes on each side. Remove and drain on paper towels.

Notes

For milder taste, use diced bell peppers instead of jalapeños or replace cream cheese with labneh for a tangy twist. Ensure oil is hot enough before frying for perfect crispiness.
