Method
 

Preparation
  1. Peel the onions and slice them into thick rings (about 1-inch wide). Carefully separate the rings and set them aside.
  2. In a mixing bowl, combine the softened cream cheese, shredded cheddar, and diced jalapeños. Mix until everything is well incorporated.
Assembly
  1. Take a ring and use a spoon to fill it generously with the cream cheese mixture. Place another ring on top to create a 'sandwich' effect. Repeat the process with the remaining rings and filling.
Coating and Frying
  1. Set up a breading station. Place the flour in one shallow bowl, whisk the egg in another, and add breadcrumbs to a third. Dredge each stuffed onion ring in flour, then dip into the egg, and coat with breadcrumbs.
  2. Heat cooking oil in a deep pan over medium heat. Once hot, gently add a few onion rings at a time, frying until they are golden brown, about 3-4 minutes per side. Avoid overcrowding the pan.
Serving
  1. Once fried, transfer the rings to a paper towel-lined plate to drain excess oil. Let them cool for a minute, then serve warm with your favorite dipping sauce.
