Ingredients
  

For the filling
  • 4 medium-sized jalapeños, seeds removed and diced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Salt to taste Salt
  • Pepper to taste Pepper
For assembling and frying
  • 10-12 pieces egg roll wrappers Use as needed for rolling.
  • Oil for frying Oil Ensure enough oil to submerge the bottom of the rolls.

Method
 

Preparation
  1. In a mixing bowl, combine the diced jalapeños, softened cream cheese, shredded cheddar cheese, salt, and pepper. Stir until the mixture is well blended and creamy.
Assembly
  1. Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Place a spoonful of the jalapeño cheese mixture in the center of the wrapper.
  2. Fold the corner closest to you over the filling, then fold in the sides and roll it up tightly. Use a dab of water to seal the edge.
  3. Repeat with the remaining wrappers and filling.
Cooking
  1. In a deep pan or skillet, heat the oil over medium-high heat.
  2. Carefully place a few rolls at a time into the hot oil. Fry them for about 3-4 minutes on each side or until they achieve a golden-brown color.
  3. Use a slotted spoon to remove them from the oil, transferring them to a paper towel-lined plate to drain any excess oil.
Serving
  1. Garnish with your favorite sauce or dip and enjoy!

Notes

These rolls can last up to 3 days in the fridge. For longer storage, freeze before frying – they will keep well for up to a month. To reheat, use an oven or air fryer.
