Preparation
- In a mixing bowl, combine the diced jalapeños, softened cream cheese, shredded cheddar cheese, salt, and pepper. Stir until the mixture is well blended and creamy.
Assembly
- Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Place a spoonful of the jalapeño cheese mixture in the center of the wrapper.
- Fold the corner closest to you over the filling, then fold in the sides and roll it up tightly. Use a dab of water to seal the edge.
- Repeat with the remaining wrappers and filling.
Cooking
- In a deep pan or skillet, heat the oil over medium-high heat.
- Carefully place a few rolls at a time into the hot oil. Fry them for about 3-4 minutes on each side or until they achieve a golden-brown color.
- Use a slotted spoon to remove them from the oil, transferring them to a paper towel-lined plate to drain any excess oil.
Serving
- Garnish with your favorite sauce or dip and enjoy!
Notes
These rolls can last up to 3 days in the fridge. For longer storage, freeze before frying – they will keep well for up to a month. To reheat, use an oven or air fryer.
