  • 6 pieces fresh jalapeños Adjust spice level by removing seeds.
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese You can use your favorite cheese.
  • 1 sheet puff pastry, thawed Ensure it is cold when working.
  • 1 large egg, beaten For egg wash.
  • ½ cup cooked shredded chicken Optional, for added protein.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the jalapeños in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine softened cream cheese and shredded mozzarella cheese until smooth. Stir in shredded chicken if using.
  4. Generously fill each jalapeño half with the cheese mixture.
  5. Roll out the thawed puff pastry, cut it into strips, and wrap them around each stuffed jalapeño.
  6. Brush each wrapped jalapeño with beaten egg.
Baking
  1. Place the mummies on a lined baking sheet and bake for 15-20 minutes until golden brown.
  2. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for later enjoyment. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
