  • 1.5 pounds ground beef (or your preferred ground meat) Can substitute with lean turkey or chicken.
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • 0.5 cup cream cheese, softened
  • 2-3 pieces fresh jalapeños, diced Adjust to taste.
  • 0.5 pieces onion, finely chopped
  • 2 cloves garlic, minced
  • 1 piece egg
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • to taste Salt and pepper
  • 0.5 cup ketchup (for topping)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, cheese, cream cheese, diced jalapeños, onion, garlic, egg, Worcestershire sauce, mustard, salt, and pepper. Use your hands or a spatula to mix until everything is well incorporated.
  3. Transfer the mixture into a meatloaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  4. Spread the ketchup on top of the meatloaf for added flavor and moisture.
Cooking
  1. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).
  2. Once done, let it rest for about 10 minutes. Slice and serve warm.

Notes

Feel free to substitute ground meat based on your preference—lean turkey or chicken also works well. If you love more spice, add diced jalapeños to the topping sauce. Don’t skip the resting time; it helps the meatloaf hold its shape when sliced.
