Preparation
- In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, green onions, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Assembly
- Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with a bit of water.
Frying
- In a large pan, heat about an inch of oil over medium heat until hot but not smoking.
- Carefully place the egg rolls in the oil, a few at a time, and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Serving
- Serve your freshly made Jalapeño Popper Egg Rolls hot with your favorite dipping sauces!
Notes
For a milder version, remove the seeds from the jalapeños before adding them to the filling. You can prepare the filling in advance and store in the fridge. Bake instead of frying for a healthier option at 425°F for about 15-20 minutes.
