  • 4 pieces chicken breasts Use boneless, skinless for best results.
  • 1 cup peaches, diced Fresh or canned peaches can be used.
  • 1 piece jalapeno, diced Adjust quantity to taste for spice level.
  • 2 tablespoons olive oil For searing the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste Pepper
  • as needed Fresh cilantro for garnish Optional but recommended.

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt, pepper, garlic powder, and onion powder.
Cooking
  1. In a skillet, heat olive oil over medium heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown.
  2. In a bowl, combine the diced peaches and jalapenos. Pour this mix over the seared chicken in the skillet.
  3. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove from the oven, sprinkle with fresh cilantro, and serve warm.

Notes

For varied flavors, consider swapping peaches for mango or pineapple. Store leftovers in the refrigerator for up to 3 days.
