  • 2 cups fresh corn kernels (or frozen, thawed) Fresh corn offers the best sweetness.
  • 1 cup all-purpose flour
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup diced jalapeños (fresh or pickled) Reduce quantity for milder fritters.
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • as needed amount Vegetable oil (for frying) Ensure oil is hot enough to avoid greasiness.

Preparation
  1. Begin by gathering all your ingredients on the kitchen counter. If using fresh corn, cut the kernels off the cob.
Mixing
  1. In a large mixing bowl, combine the corn, flour, cheddar cheese, jalapeños, eggs, green onions, baking powder, salt, and pepper. Stir until well combined. The mixture should be thick and hold together.
Cooking
  1. In a large skillet, add enough vegetable oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat until hot (around 350°F or 180°C).
  2. Use a spoon or small ice cream scoop to drop spoonfuls of the batter into the hot oil. Fry until golden brown, about 3-4 minutes per side. You may need to work in batches to avoid overcrowding the skillet.
  3. Once golden, transfer the fritters to a plate lined with paper towels to drain excess oil.
Serving
  1. Serve immediately with your homemade Chipotle Aioli for dipping!

Notes

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for about 10-15 minutes for best results. Uncooked fritters can be frozen for up to 2 months.
