Ingredients

For the Filling
  • 4 oz cream cheese (softened) Use softened cream cheese for easy mixing.
  • 1/4 cup powdered sugar
  • 1/4 cup pumpkin puree Ensure it's halal.
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
For the Toast
  • 4 slices thick bread (such as challah or brioche) Opt for thicker slices for a crispy texture.
  • 2 large eggs
  • 1/2 cup milk (dairy or plant-based) Feel free to use flavored milk.
  • Butter or oil for frying Butter or oil for frying Halal-friendly option.
  • Honey or syrup optional Honey or syrup For serving, optional.

Method

Preparation
  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, pumpkin puree, vanilla extract, and ground cinnamon. Mix until smooth and creamy.
  2. Take the slices of bread and carefully cut jack-o-lantern faces into the bread. You can use cookie cutters for this as well.
  3. Spread the cream cheese filling evenly on half of the bread slices. Place the other half on top to create a sandwich.
Cooking
  1. In a shallow bowl, whisk together the eggs and milk.
  2. In a large skillet, add butter or oil and heat it over medium heat until melted.
  3. Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side. Place it in the skillet and cook until golden brown, about 3-4 minutes per side.
  4. Remove from the skillet and serve warm, dusted with powdered sugar or drizzled with honey or syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or skillet on low heat. You can freeze the uncooked sandwiches for later use.
