- In a large pot, heat the olive oil over medium heat.
- Add the halal Italian sausage and cook until browned, breaking it up with a wooden spoon as it cooks (about 5-7 minutes).
- Once the sausage is browned, add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes, or until the onions become translucent.
- Pour in the diced tomatoes along with their juice and the vegetable broth. Bring the mixture to a boil.
- Add the pasta to the boiling soup and cook according to the package instructions or until al dente (usually about 9-11 minutes, depending on the pasta).
- In the last few minutes of cooking, stir in the fresh spinach and Italian seasoning. Season with salt and pepper to taste.
- Once everything is cooked through and the spinach is wilted, ladle the soup into bowls. Garnish with fresh parsley or grated cheese if desired.

Notes
Substitutions: If you can’t find halal Italian sausage, ground turkey or chicken can be great alternatives. Timing matters; don't overcrowd the pot when browning the sausage. Avoid overcooking the pasta.
