  • 1 pound halal Italian sausage
  • 8 ounces pasta (your choice, preferably small shapes like shells or ditalini)
  • 4 cups vegetable broth
  • 14.5 ounces can of diced tomatoes with juice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the halal Italian sausage and cook until browned, breaking it up with a wooden spoon as it cooks (about 5-7 minutes).
  3. Once the sausage is browned, add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes, or until the onions become translucent.
  4. Pour in the diced tomatoes along with their juice and the vegetable broth. Bring the mixture to a boil.
  5. Add the pasta to the boiling soup and cook according to the package instructions or until al dente (usually about 9-11 minutes, depending on the pasta).
  6. In the last few minutes of cooking, stir in the fresh spinach and Italian seasoning. Season with salt and pepper to taste.
  7. Once everything is cooked through and the spinach is wilted, ladle the soup into bowls. Garnish with fresh parsley or grated cheese if desired.

Notes

Substitutions: If you can’t find halal Italian sausage, ground turkey or chicken can be great alternatives. Timing matters; don't overcrowd the pot when browning the sausage. Avoid overcooking the pasta.
