  • 2 medium zucchinis, grated
  • 2 cloves garlic, minced
  • 1 cup grated Parmesan cheese Can substitute with nutritional yeast for dairy-free.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs for gluten-free option.
  • 2 large eggs
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil for frying About 1/4 inch deep in the pan.

Preparation
  1. Start by grating the zucchinis using a grater. Place the grated zucchini into a large bowl and sprinkle with a little salt. Let it sit for about 10 minutes to draw out excess moisture.
  2. After the zucchinis have released moisture, squeeze out as much liquid as possible using a clean kitchen towel.
  3. In the same bowl, add minced garlic, grated Parmesan cheese, breadcrumbs, eggs, oregano, salt, and pepper. Mix everything well until combined.
Cooking
  1. Take small portions of the mixture and shape them into bite-sized patties or balls, about 1 inch thick.
  2. In a large frying pan, heat olive oil over medium heat.
  3. Carefully place the formed bites into the hot oil, cooking a few at a time to avoid overcrowding. Fry until they are golden brown, about 3-4 minutes on each side.
  4. Once cooked, transfer them to a paper towel-lined plate to absorb excess oil.
  5. Serve hot with your favorite dipping sauce, or enjoy them as is.

Notes

For a dairy-free option, substitute Parmesan with nutritional yeast. Squeeze out excess moisture from zucchinis well before frying to ensure proper texture.
