Preparation
- Start by grating the zucchinis using a grater. Place the grated zucchini into a large bowl and sprinkle with a little salt. Let it sit for about 10 minutes to draw out excess moisture.
- After the zucchinis have released moisture, squeeze out as much liquid as possible using a clean kitchen towel.
- In the same bowl, add minced garlic, grated Parmesan cheese, breadcrumbs, eggs, oregano, salt, and pepper. Mix everything well until combined.
Cooking
- Take small portions of the mixture and shape them into bite-sized patties or balls, about 1 inch thick.
- In a large frying pan, heat olive oil over medium heat.
- Carefully place the formed bites into the hot oil, cooking a few at a time to avoid overcrowding. Fry until they are golden brown, about 3-4 minutes on each side.
- Once cooked, transfer them to a paper towel-lined plate to absorb excess oil.
- Serve hot with your favorite dipping sauce, or enjoy them as is.
Notes
For a dairy-free option, substitute Parmesan with nutritional yeast. Squeeze out excess moisture from zucchinis well before frying to ensure proper texture.
