Preparation
- Start by washing the zucchinis and grating them using a box grater or food processor. Squeeze out excess moisture from the grated zucchini using a clean kitchen towel or cheese cloth.
- In a large bowl, combine the grated zucchinis, minced garlic, breadcrumbs, grated Parmesan cheese, eggs, Italian seasoning, salt, and pepper. Stir until everything is well mixed.
- With clean hands, take a tablespoon of the mixture and form small, round patties, pressing them gently to ensure they hold their shape.
Cooking
- In a frying pan, heat about an inch of olive oil over medium-high heat. It’s ready when a small drop of the mixture sizzles upon contact.
- Carefully place the patties in the hot oil and fry for about 2-3 minutes on each side or until golden brown.
- Once cooked, transfer the bites to a paper towel-lined plate to absorb excess oil. Serve hot and enjoy!
Notes
For a gluten-free option, use gluten-free breadcrumbs or almond flour. Avoid overcrowding the pan for even cooking. Store leftovers in an airtight container in the refrigerator for 3-4 days. They can be frozen for up to 2 months and reheated in an oven at 350°F for 10-15 minutes.
