Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt. Mix until well incorporated.
- In another bowl, whisk together the melted butter, honey, and egg until fully blended.
- Gradually add the wet mixture to the dry mixture, stirring until the dough comes together. It will be slightly sticky.
- Using a spoon or cookie scoop, drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie for them to spread.
Baking
- Place the baking sheet in the oven and bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag. Reheat in a microwave for a few seconds or warm in a preheated oven at 300°F (150°C) for a few minutes.
