Ingredients
  

For the soup
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 6 cups chicken broth Ensure it is Halal-certified.
  • 2 cups cooked chicken, shredded Use Halal-certified chicken.
  • 1 cup spinach or kale
  • to taste Salt and pepper
  • Juice of 1 lemon

Cooking Steps
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onions become translucent and fragrant—about 3-4 minutes.
  3. Stir in the sliced carrots and celery, letting them soften for another 5-7 minutes.
  4. Sprinkle in the dried oregano, dried thyme, salt, and pepper. Stir well to combine the flavors.
  5. Pour in the chicken broth, bringing the mixture to a gentle simmer.
  6. Once simmering, add the shredded cooked chicken and stir in the spinach (or kale).
  7. Squeeze the juice of one lemon into the soup and stir just before serving.

Notes

Feel free to swap out any of the vegetables based on what you have at home—zucchini or green beans can also work incredibly well. Don’t rush the sautéing process; this builds the base of flavor for your soup. Ensure your broth is Halal and check for any unwanted additives in packaged ingredients. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently on the stove or microwave.
