For the Batter
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup German chocolate, melted

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan with a little butter or line it with parchment paper.
  2. In a large mixing bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Gently fold in the shredded coconut, chopped pecans, and melted German chocolate until evenly distributed.
  6. Pour the batter into the prepared baking pan and spread it evenly.
Baking
  1. Place the pan in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  2. Allow the bars to cool in the pan for at least 10 minutes before slicing into squares.

Notes

Consider substituting nuts or using desiccated coconut for a different texture. Don't overbake to ensure they'll be soft in the middle.
