Preparation
- Heat olive oil in a medium skillet over medium heat. Add finely sliced onions and cook for about 10-12 minutes, stirring often until they are golden brown and caramelized.
- In a large mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer until everything is smooth and well-blended.
- Stir in garlic powder, season with salt and pepper to taste. Mix in caramelized onions and half of the shredded smoked Gouda.
Baking
- Preheat your oven to 350°F (175°C). Transfer the dip mixture into a baking dish and sprinkle the remaining smoked Gouda on top.
- Bake for 20-25 minutes until bubbling and golden on top.
Serving
- Remove from the oven and let it cool slightly. Garnish with chopped chives or parsley if desired. Serve warm with fresh veggies or pita chips.
Notes
If smoked Gouda isn’t available, substitute with a blend of cheddar and mozzarella. Ensure cream cheese is sufficiently softened before mixing. Store leftovers in an airtight container for up to three days. Reheat in the oven at 350°F for about 15-20 minutes or microwave until warmed through.
