- Boil the large potatoes until they are tender. Once cooked, drain and let them cool. Then, mash them to a creamy consistency.
- In a large mixing bowl, combine the mashed potatoes, breadcrumbs, grated cheese, chopped green onions, garlic powder, salt, and pepper. Mix well until everything is evenly blended.
- With your hands, take portions of the potato mixture and roll them into small balls, about the size of a golf ball. You can also experiment with shape—flatten them if you prefer.
- In a deep frying pan, heat oil over medium heat. Ensure the oil is hot enough for frying; you can test this by dropping a small piece of the mixture into the oil—if it sizzles, it’s ready!
- Carefully place a few potato balls into the hot oil. Fry until they are golden brown and crispy, which usually takes about 3-4 minutes per batch. Remember to flip them halfway for even cooking.
- Once they’re perfectly golden, use a slotted spoon to remove them from the oil and drain on paper towels. They’re ready to be enjoyed!
Notes
For best results, store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month before cooking. Reheat in the oven for the best texture.
