Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon ground cinnamon plus extra for topping
Wet Ingredients
  • 2 large eggs
  • 1 cup yogurt can substitute with applesauce for a lighter version
  • ½ cup vegetable oil
Main Ingredients
  • 2 cups peeled, diced apples preferably Granny Smith or your favorite variety

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat together the eggs, yogurt, and vegetable oil until smooth.
  4. Gradually fold the wet ingredients into the dry mixture and stir gently until just combined.
  5. Gently fold in the diced apples until evenly distributed.
  6. Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
  7. Sprinkle a little cinnamon sugar on top for an extra touch.
Baking
  1. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
Serving
  1. Enjoy warm or at room temperature!
