Fruit Mixture
  • 2 cups black tea, brewed and cooled
  • 1 cup raisins
  • 1 cup mixed dried fruit (e.g., currants, sultanas)
Dry Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 large egg
  • 2 tablespoons melted butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the brewed tea, raisins, and mixed dried fruit. Allow this mixture to sit for about 30 minutes to soak.
Mixing Ingredients
  1. In another bowl, whisk together the flour, brown sugar, baking soda, baking powder, cinnamon, and salt.
  2. Gradually stir the fruit mixture into the dry ingredients just until combined.
  3. Beat the egg in a small bowl and mix it with the melted butter. Pour this into the batter and stir gently to combine.
Baking
  1. Pour the batter into your prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
  2. Allow the loaf to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Serve with butter or your favorite jam. For variations, try different dried fruits such as apricots or cranberries. Store in refrigerator for up to a week or freeze slices for up to three months.
