  • 1 cup mashed potatoes Use leftover mashed potatoes if available.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter, melted
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the mashed potatoes, flour, baking powder, and salt.
  3. Pour in the melted butter and milk, and stir until a soft dough forms.
  4. Lightly flour your work surface and turn out the dough. Knead it gently for a minute to combine.
  5. Shape the dough into a round loaf about 1 inch thick. Place it on a baking sheet lined with parchment paper.
  6. Use a sharp knife to cut an 'X' on top of the loaf; this helps it cook evenly!
Baking
  1. Bake for 20-25 minutes or until the top is golden brown and a toothpick comes out clean.
  2. Allow to cool for a few minutes before slicing. Enjoy warm with your favorite toppings!

Notes

Top tips include using leftover mashed potatoes and not overworking the dough. Experiment with flavors by adding herbs or cheese.
