  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients.
  5. Gently fold in the rolled oats and optional add-ins like raisins or chocolate chips.
  6. Drop spoonfuls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until the edges are lightly golden.
  8. Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.

Notes

For best results, use unsalted butter and keep an eye on the cookies to avoid overbaking. Experiment with add-ins like nuts or coconut for variations.
