- Press the 'Sauté' button on your Instant Pot and add the sesame oil. Let it heat up for about a minute.
- Toss in the sliced green onions, carrot, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
- Pour in the chicken or vegetable broth, then add the soy sauce and stir to combine. Gently break the instant ramen noodles in half and add them to the pot.
- Lock the lid in place, ensuring the vent is closed. Set it to 'Manual' mode for 4 minutes. Once the timer goes off, do a quick release by turning the valve carefully.
- If you want to add eggs, gently place them in the broth during the last minute of cooking. They will poach nicely for added protein!
- Ladle the ramen into bowls and top with your choice of cooked chicken, fresh spinach, and mushrooms. Serve hot!
Notes
Substitutions: You can substitute instant ramen noodles with any other favorite noodle or even use rice noodles for a gluten-free option. If you prefer softer noodles, add an extra minute to the cooking time. Avoid overfilling your Instant Pot as it may not seal properly, affecting the cooking process.
