  • 2 packs instant ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 1 carrot, sliced
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 eggs (optional) Can be added for extra protein.

Method
 

Preparation
  1. Press the 'Sauté' button on your Instant Pot and add the sesame oil. Let it heat up for about a minute.
  2. Toss in the sliced green onions, carrot, garlic, and ginger. Sauté for 2–3 minutes until fragrant.
  3. Pour in the chicken or vegetable broth, then add the soy sauce and stir to combine. Gently break the instant ramen noodles in half and add them to the pot.
  4. Lock the lid in place, ensuring the vent is closed. Set it to 'Manual' mode for 4 minutes. Once the timer goes off, do a quick release by turning the valve carefully.
  5. If you want to add eggs, gently place them in the broth during the last minute of cooking. They will poach nicely for added protein!
  6. Ladle the ramen into bowls and top with your choice of cooked chicken, fresh spinach, and mushrooms. Serve hot!

Notes

Substitutions: You can substitute instant ramen noodles with any other favorite noodle or even use rice noodles for a gluten-free option. If you prefer softer noodles, add an extra minute to the cooking time. Avoid overfilling your Instant Pot as it may not seal properly, affecting the cooking process.
