Preparation
- Season the chicken breasts with salt, pepper, and dried thyme.
- Turn your Instant Pot to the ‘Sauté’ function. Add olive oil and let it heat up.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the seasoned chicken breasts to the pot. Sear each side for approximately 3-4 minutes until golden brown.
- Pour in the lemon juice and chicken broth, making sure to scrape up any bits stuck to the bottom of the pot.
- Close the lid of the Instant Pot and seal the vent. Set it to high pressure for 8 minutes.
- After cooking, let it naturally release pressure for 5 minutes, then perform a quick release for any remaining pressure.
- Remove the chicken from the pot, whisk in the lemon zest, and thicken the sauce if desired.
- Garnish with fresh parsley before serving.
- Pair with rice or seasonal vegetables.
Notes
Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to a month. Reheat on the stovetop or in the microwave.
