Ingredients
  

Proteins
  • 1 lb shrimp, peeled and deveined
  • 1 lb chicken, diced
  • 1 lb sausage, sliced
Vegetables
  • 1 each onion, diced
  • 1 each bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
Other Ingredients
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

Cooking
  1. Start by turning on your Instant Pot and selecting the ‘Sauté’ function. Add the sausage slices and cook until they’re browned, which should take around 5 minutes.
  2. Toss in the diced onion, bell pepper, celery, and minced garlic. Sauté for another 3 minutes, letting those lovely vegetables soften.
  3. Add the diced chicken to the pot and cook until it’s lightly browned.
  4. Layer in the rice, diced tomatoes, chicken broth, Cajun seasoning, and some salt and pepper. Stir well to combine everything.
  5. Close the lid and set the Instant Pot to ‘Manual’ for 10 minutes.
  6. Once done, let it naturally release for 10 minutes before performing a quick release for any remaining pressure.
  7. Stir in the shrimp after you open the lid. Cover and let it sit for about 5 minutes until the shrimp are cooked through.
  8. Garnish with fresh green onions and get ready to enjoy your culinary masterpiece!

Notes

Feel free to swap out proteins based on your preference. To reheat leftovers, warm in the microwave or stovetop with a splash of water.
