  • 1 lb ground beef
  • 1 cup uncooked long-grain white rice
  • 1 small onion, diced
  • 1 medium bell pepper, diced (any color)
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet (about 1 oz) taco seasoning
  • 2 cups beef broth
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil for sautéing

Method
 

Preparation
  1. Turn on your Instant Pot and select the 'Sauté' function. Add olive oil and allow it to heat up. Toss in the diced onion and bell pepper, sautéing until soft, about 3-4 minutes.
  2. Add the ground beef to the pot, breaking it up with a spatula. Cook until browned, seasoning with salt and pepper to taste. Drain any excess fat if necessary.
  3. Stir in the taco seasoning, diced tomatoes (with juice), and beef broth. Make sure everything is well-combined.
  4. Gently fold the uncooked rice into the mixture. Avoid stirring too vigorously to prevent sticking.
  5. Close the lid on the Instant Pot, set the valve to 'Sealing,' and select the 'Manual' or 'Pressure Cook' setting for 10 minutes.
  6. Once cooking time is complete, perform a quick release of the pressure.
  7. Carefully open the Instant Pot and stir in the shredded cheese until fully melted and creamy.
  8. Scoop the cheesy taco ground beef and rice into bowls and garnish with your favorite toppings.

Notes

For a lighter dish, substitute ground turkey or chicken for ground beef. If you prefer firmer rice, reduce cooking time to 8 minutes. Ensure enough liquid to avoid the 'Burn' notice.
