  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 cup long-grain rice, rinsed well
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 1 cup mixed vegetables (optional, like carrots and peas)

Preparation
  1. Set your Instant Pot to the 'Sauté' function. Add a splash of oil and brown the beef stew meat for about 3 to 4 minutes. This step enhances the flavor.
  2. Once the meat is browned, stir in the diced onion and minced garlic. Sauté for another 2 minutes until the onion is soft and fragrant.
  3. Pour in the beef broth, soy sauce, dried thyme, and give it a good stir. If using, add the mixed vegetables at this step.
  4. Pour the rinsed rice into the pot and give everything a gentle mix, ensuring the rice is submerged in the liquid.
  5. Seal the lid of the Instant Pot and set it to cook on high pressure for 10 minutes.
  6. Once cooking time is up, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  7. Fluff the beef and rice with a fork, add salt and pepper to taste, and garnish with fresh herbs if desired. Enjoy your delicious one-pot creation!

Notes

Browning the beef is crucial for flavor. Adjust cooking time if using brown rice to approximately 22 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. When reheating, add a bit of water or broth to restore moisture.
