  • 2 cups fresh spinach
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese Gruyère or mozzarella
  • Salt and pepper to taste
  • Fresh thyme for garnish optional

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  • Cook the Pasta: Boil a pot of salted water and cook your pasta according to package instructions until al dente. Drain and set aside.
  • Sauté the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown. This should take around 10-15 minutes.
  • Add Garlic and Mushrooms: Add the minced garlic and sliced mushrooms to the skillet. Continue cooking until the mushrooms have softened and reduced in size, about 5-7 minutes.
  • Incorporate Spinach: Toss in the fresh spinach and cook until wilted, stirring everything together.
  • Prepare the Sauce: In a separate bowl, mix together the vegetable broth and heavy cream. Season with salt and pepper to taste.
  • Combine: In your baking dish, combine the cooked pasta, the sautéed vegetable mixture, and the creamy sauce, stirring until everything is well mixed.
  • Add Cheese: Sprinkle the top with shredded cheese.
  • Bake: Place the dish in the preheated oven and bake for about 25-30 minutes until the cheese is melted and golden brown.
  • Garnish and Serve: Garnish with fresh thyme before serving for an added touch of flavor.
