  • 1 whole whole chicken or 4 chicken thighs or breasts
  • 6 cups chicken broth
  • 2 pieces carrots, sliced
  • 2 stalks celery, sliced
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated or 1/2 teaspoon ground ginger
  • 1 teaspoon turmeric powder
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish
  • 1 piece Juice of 1 lemon

Method
 

Preparation
  1. If using a whole chicken, rinse it well and remove any organs from the cavity. Place the chicken in a large pot and cover it with chicken broth. If using thighs or breasts, place them directly in the broth.
  2. Add the sliced carrots, celery, chopped onion, minced garlic, and fresh ginger.
  3. Sprinkle in the turmeric, along with salt and pepper to taste.
  4. Bring the mixture to a boil over medium heat.
  5. Once boiling, reduce the heat to low and allow it to simmer for about 45 minutes to an hour, or until the chicken is fully cooked and tender.
  6. Carefully remove the chicken from the pot. Allow it to cool slightly, shred the meat, and return it to the soup.
  7. Stir in the lemon juice and adjust seasoning if needed. Serve hot, garnished with fresh herbs!

Notes

Feel free to mix and match the veggies based on what you have in your pantry. Allowing the soup to simmer longer can deepen the flavors, so don’t rush this step. If you have leftovers, refrigerate in an airtight container for up to three days or freeze for up to three months. When reheating, add a splash of water or broth.
