  • 1 cup unsalted butter, softened Bring to room temperature for easier mixing.
  • 1 cup brown sugar Packed for measurement.
  • 1/2 cup granulated sugar
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Sifted before measuring.
  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Icing Ingredients
  • 2 cups powdered sugar Sifted for a smooth glaze.
  • 2-3 tablespoons milk Adjust for desired consistency.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Gently fold in the rolled oats until evenly distributed.
  7. Use a cookie scoop to drop rounded tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden brown.
  2. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Icing
  1. In a bowl, whisk together powdered sugar and milk until smooth.
  2. Drizzle the icing over the cooled cookies.

Notes

For perfect cookies, do not overmix the dough. You can experiment with icing flavors by adding almond extract or food coloring.
