Ingredients
  

For the soup
  • 2 tablespoons butter For sautéing
  • 1 cup chopped onions Use yellow or white onions
  • 2 cups sliced mushrooms Any variety of mushrooms can be used
  • 2 cloves garlic, minced Fresh garlic preferred
  • 4 cups vegetable broth Use low-sodium if desired
  • 1 teaspoon paprika Smoked paprika adds extra flavor
  • 1 tablespoon soy sauce Can substitute with tamari for gluten-free
  • 1 cup milk or cream For a creamier texture
  • Salt and pepper to taste
For garnishing
  • Fresh parsley Chopped, for garnish

Method
 

Preparation
  1. Melt the butter in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent, about 5 minutes.
  3. Add minced garlic and sauté for an additional minute until fragrant.
Cooking
  1. Stir in the sliced mushrooms and cook until softened and juices are released, about 6-8 minutes.
  2. Sprinkle in the paprika and pour in the soy sauce. Stir well to combine for about 2 minutes.
  3. Carefully add the vegetable broth, bring to a gentle boil, then reduce heat and let it simmer for 10 minutes.
  4. Stir in the milk or cream until blended, season with salt and pepper to taste, and heat through for an additional 5 minutes.
Serving
  1. Ladle the soup into bowls and garnish with fresh parsley.
  2. Enjoy warm!

Notes

For a Halal-friendly option, use tamari or coconut aminos. Allow the soup to simmer longer for a deeper flavor. Avoid skipping the sauté step to prevent mushrooms from becoming mushy.
