Ingredients
  

Dumplings & Noodles
  • 1 pack Dumplings (vegetable or Halal-friendly chicken) Use pre-made for convenience.
  • 2 cups egg noodles (or rice noodles) Adjust based on preference.
For the Broth
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste Adjust for spice level.
Vegetables & Extras
  • 1 cup mushrooms (shiitake or button, sliced)
  • 1 can bamboo shoots, drained
  • 2 units green onions, sliced For garnish.
  • 1 cup tofu, cut into cubes Optional.
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Method
 

Preparation
  1. In a large pot, bring the vegetable broth to a gentle boil.
  2. Add the soy sauce, rice vinegar, and chili paste. Stir well to combine and allow the flavors to meld for about 5 minutes.
Cooking
  1. Carefully add the dumplings to the pot and let them simmer gently, following the package instructions (usually around 5-7 minutes to cook through).
  2. Once the dumplings are nearing their cooking time, add the egg noodles (or rice noodles) to the pot and cook until they are al dente, about 3-5 minutes.
  3. Toss in the mushrooms, bamboo shoots, and tofu (if using) and cook for another 2-3 minutes until the vegetables are tender but still crisp.
Serving
  1. Taste the broth and season with salt and pepper as needed.
  2. Remove from heat, ladle into bowls and top with sliced green onions and fresh cilantro for an aromatic finish.

Notes

Dumpling Choices: Use pre-made Halal-friendly dumplings for convenience. Customize the spice to your taste. Be careful not to overcook the noodles to maintain texture.
