- In a large pot, bring the vegetable broth to a gentle boil.
- Add the soy sauce, rice vinegar, and chili paste. Stir well to combine and allow the flavors to meld for about 5 minutes.
Cooking
- Carefully add the dumplings to the pot and let them simmer gently, following the package instructions (usually around 5-7 minutes to cook through).
- Once the dumplings are nearing their cooking time, add the egg noodles (or rice noodles) to the pot and cook until they are al dente, about 3-5 minutes.
- Toss in the mushrooms, bamboo shoots, and tofu (if using) and cook for another 2-3 minutes until the vegetables are tender but still crisp.
Serving
- Taste the broth and season with salt and pepper as needed.
- Remove from heat, ladle into bowls and top with sliced green onions and fresh cilantro for an aromatic finish.
Notes
Dumpling Choices: Use pre-made Halal-friendly dumplings for convenience. Customize the spice to your taste. Be careful not to overcook the noodles to maintain texture.
