- Preheat your oven to 400°F (200°C). Peel the beets using a vegetable peeler and cube them into roughly 1-inch pieces.
- In a large bowl, combine the cubed beets with honey, olive oil, salt, and pepper. Toss until the beets are evenly coated.
- Line a baking sheet with parchment paper for easy clean-up, then transfer the coated beets onto the sheet, spreading them out in a single layer.
Cooking
- Place the baking sheet in the preheated oven and roast for about 30-35 minutes, stirring halfway to ensure they cook evenly. They'll be done when fork-tender and caramelized.
Serving
- Remove from the oven and let cool slightly. They are perfect as a side dish or a sweet addition to salads. Serve and enjoy!
Notes
For a vegan option, swap honey for maple syrup. If you prefer softer beets, roast them longer while monitoring to avoid burning. Cut the beets evenly for uniform cooking and do not skimp on honey for proper caramelization. Store in an airtight container in the fridge for 3-5 days or freeze for up to 3 months. To reheat, warm in a 350°F (175°C) oven for about 15 minutes or microwave briefly.
