Preparation
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet. Drizzle them lightly with olive oil and sprinkle with salt and pepper.
- Bake for 8-10 minutes, or until they are golden brown and crispy.
- In a small bowl, mix the ricotta cheese with 3 tablespoons of honey until well combined. Season with a pinch of salt and pepper to taste.
Assembly
- Once the baguette slices are ready, spread a generous amount of the honey ricotta mixture on each piece.
- Top with a few slices of peach.
- Drizzle additional honey over the top of each crostini.
- If desired, top with fresh mint leaves for a pop of color and flavor.

- Serve immediately and enjoy!
Notes
Store leftover components separately in an airtight container in the refrigerator for up to 2 days. Reheat crostini in the oven at 350°F (175°C) for a few minutes until warmed through. Consider grilling the baguette slices for added flavor.
