Ingredients
  

For the Crostini
  • 1 French baguette 1 French baguette, sliced into ½-inch pieces
  • 1 cup 1 cup ricotta cheese Opt for fresh ricotta for better flavor.
  • 2 pieces 2 ripe peaches, thinly sliced Alternative options include nectarines or strawberries.
  • 3 tablespoons 3 tablespoons honey, plus more for drizzling
  • 1 tablespoon Olive oil, for drizzling
Seasoning
  • to taste Salt and pepper to taste
Garnish (optional)
  • a few Fresh mint leaves for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange the baguette slices on a baking sheet. Drizzle them lightly with olive oil and sprinkle with salt and pepper.
  3. Bake for 8-10 minutes, or until they are golden brown and crispy.
  4. In a small bowl, mix the ricotta cheese with 3 tablespoons of honey until well combined. Season with a pinch of salt and pepper to taste.
Assembly
  1. Once the baguette slices are ready, spread a generous amount of the honey ricotta mixture on each piece.
  2. Top with a few slices of peach.
  3. Drizzle additional honey over the top of each crostini.
  4. If desired, top with fresh mint leaves for a pop of color and flavor.
Serving
  1. Serve immediately and enjoy!

Notes

Store leftover components separately in an airtight container in the refrigerator for up to 2 days. Reheat crostini in the oven at 350°F (175°C) for a few minutes until warmed through. Consider grilling the baguette slices for added flavor.
